Cooking instructions: Gas grill: preheat grill on medium to medium high (450 degrees F to 550 degrees F). Grill 6 to 8 inches from heat source. Place chicken thigh on grill. Put the cover or lid on. Cook for 25 to 30 minutes turning approximately every 5 minutes until the internal temperature reaches 180 degrees F in the middle of the thickest part of the chicken thigh. Charcoal grill: light chunks or briquettes until only coals remain. Place the grate so that it is 6 to 8 inches from the coals or use indirect heat to cook. Grill 6 to 8 inches from heat source. Place chicken thigh on grill. Put the cover or lid on. Cook for 25 to 30 minutes turning approximately every 5 minutes until the internal temperature reaches 180 degrees F in the middle of the thickest part of the chicken thigh. Oven: rack should be moved to the middle position in the oven. Preheat oven to 375 degrees F. Place chicken on a lightly oiled shallow roasting pan. Bake 40 to 50 minutes until the internal temperature reaches 180 degrees F in the middle of the thickest part of the chicken thigh.
