You will need. 8 Corn tortillas. 8 Ounces (about 1 ½ cups) shredded Monterey jack or cheddar cheese. 1 Pouch simply organic red enchilada simmer sauce. 1.Preheat oven to 400°. Lightly grease a 3-quart baking dish. 2. While oven is preheating, wrap tortillas in foil and warm in oven for 5 minutes. 3.To assemble enchiladas, place 2 tbsp cheese into each warm tortilla. Roll each tortilla and place seam-side down in baking dish. 4.Cover tortillas with simmer sauce. Sprinkle with remaining cheese. 5.Cover with foil and bake for 12 minutes or until heated through. Remove foil and bake 5 minutes more. Serve with your favorite toppings. Do not microwave. Chef suggests. Substitute shredded cooked chicken or beef for the cheese in the filling.
