We started La Quercia with the goal of making uniquely delicious cured meats from humanely raised American pork. The bounty of our home region inspired us to start curing meats in our Des Moines basement. We were captivated from day one! A decade later, we still salt, work, and trim each piece by hand at our aging rooms in Norwalk, Iowa. No nitrates or nitrites. *Except for nitrates naturally occurring in celery extract and sea salt.
