The GaviIan Mountain Range is home to the Chalone Appellation, a remote vineyard area rooted in unique volcanic soils. These soils, underlain by limestone and granite, resemble those in France's Cote d'Or, and inspired the founders of the Chalone Vineyard to craft a legacy of Burgundian-style wines. Gavilan carries on their tradition with a primary focus on Chalone Vineyard's Dijao vineyard plantings from the & 1990s.
