These soils, underlain by limestone and granite, resemble those in France's Cote d'Or, and inspired the founders of the Chalone Vineyard to craft a legacy of Burgundian-style wines. Gavilan carries on this tradition with a primary focus on Chalone Vineyards Dijon, vineyard plantings from the 1990s. The result is a Chardonnay that offers an early drinking expression of the Chalone appellation, with fresh citrus aromas, lush fruit flavors, and graceful balance upon release.
