Servings: 6 Prep Time: 15 min. Cook Time: 30 min. Pressure Cooker 5-6 hrs. Slow Cooker 2 1/2-3 hrs. Conventional Oven Step 1: Pressure Cooker - Select sauté function & add pancetta to pot. Sauté 3 minutes, until fat starts to render. Place pork in pot, sprinkle with salt & pepper and cook until browned on all sides, about 5 minutes. Stir in tomato paste, onion, carrot and garlic. Cut stewed tomatoes with scissors while still in can into smaller bite sizes. Slow Cooker - Heat a large skillet over medium heat. Add pancetta and cook 3 minutes, until fat starts to render. Add pork to pan, sprinkle with salt & pepper and cook until browned on all sides, about 5 minutes. Stir in tomato paste, onion, carrot and garlic. Pour into 4½ quart slow cooker. Step 2: Pressure Cooker - Add ham hock, oregano, thyme, Parmesan rind and tomatoes to pot. Lock lid in place and close pressure release valve. Select high pressure cook function and cook 25 minutes. When time is up, turn off multi cooker and quick release steam. Carefully remove lid and discard ham hock & herb stems. Shred pork with 2 forks. Slow Cooker - Cut stewed tomatoes with scissors while still in can into smaller bite sizes. Add ham hock, oregano, thyme, Parmesan rind and tomatoes to slow cooker. Cook on low 5 to 6 hours, until pork is tender. Discard ham hock, herb stems and any remaining Parmesan rind. Shred pork and continue with step 3 below. Step 3: Melt butter in skillet over medium heat. Add gnocchi and cook until browned and crispy, about 5 minutes, stirring occasionally. Add Pork Ragù and Parmesan cheese to skillet and stir until combined. Serve with additional Parmesan, if desired.
