Roasting Blends: Preheat oven to 425. Coat veggies with olive oil (about 1 tbsp). Season with salt and pepper to taste. Place veggies in single layer on baking sheet. Roast for 20-35 minutes, or until desired tenderness and crispness reached. Keep refrigerated.
