You Will Need Per Packet: Coconut milk - 1 cup; Melted butter - 1 oz; Vanilla - 1 tsp; Water - 1 cup; Raisins (optional) - 1 oz. Method: 1. Add water to Sweet Potato Pudding Mix in bowl and stir. Stand for 10 minutes. 2. Mix coconut milk, butter and vanilla, then add to mixture. 3. Mix thoroughly until there are no lumps. Stand for 10 minutes. Pour into greased 6 inch tin. Sprinkle with raisins. 4. Bake at 350 degrees F for approximately 50 minutes. Allow to cool. Preparation of Coffee/Sweet Potato Pudding: Ingredients: 3/4 cup coconut milk, 1/4 cup brewed coffee, 1 oz melted butter, 1 tsp vanilla, 1 cup water, 1 oz raisins (optional). Add water to Sweet Potato Pudding Mix in bowl and stir. Stand for 10 minutes. Mix coconut milk, coffee, butter and vanilla, then add to mixture. Mix thoroughly until there are no lumps. Stand for 10 minutes. Pour into greased tin. Sprinkle with raisins. Bake at 350 degrees F for approximately 50 minutes. Cool. Best before patch code.
