Made from our cows' raw milk. Aged over 60 days. Our cheese is not another push button cheese. Our family makes every batch by hand on our farm where we milk our own cows and feed them fresh pasture. We age our cheeses in climate controlled cellars, on locally grown wood shelving. The wheels grow a natural rind that develops unique character in an old-world style.
