You'll need: 1 egg. 1 stick (1/2 cup) butter or margarine*, softened (not melted). Tip: roll dough in coarse granulated sugar before baking for a special touch. 1. Heat oven to 350 degrees F. Heat oven to 350 degrees F. If necessary, soften cold butter in microwave on high power for 10-15 seconds. 2. Stir with a spoon. Stir egg, butter and cookie mix until dough forms, hand kneading if necessary. Scoop dough and place 2 inches apart onto ungreased cookie sheet. For cookie bars, press dough into lightly greased 8x8-inch pan. 3. Bake until golden. Bake as directed below or until edges are light golden brown. Cool 5 minutes and remove from cookie sheet. For cookie bars, cool thoroughly before cutting. Store cooled cookies in airtight container. Do not eat raw batter. Yield - dough quantity - bake time: 18-21 cookies - 1 rounded tbsp - 9-11 minutes. 12 cookies - 2 rounded tbsp - 11-13 minutes. Cookie bars - 8x8-inch pan - 24-26 minutes. High altitude (over 5,000 feet): prepare as directed, adding 2 tablespoons all-purpose flour. *Real butter works best. If using margarine, use one that contains more than 65% oil. Iced cutout sugar cookies: Heat oven to 350 degrees F. Prepare cookie dough as directed above, reducing the amount of butter to 1/3 cup. Place dough on floured surface; roll to 1/4-inch thickness. Cut into desired shapes and place 2 inches apart onto ungreased cookie sheet. Bake 8-11 minutes or until edges are light golden brown. Cool cookies completely. Icing: In small bowl, stir together 3 cups powdered sugar, 3 tbsp warm water, 1 tbsp light corn syrup and 1/4 tsp almond extract until well blended and smooth. If adding food coloring, start with a few drops until desired shade is reached. Decorate as desired.
