Peapod Meal Kit: Vegetarian Jackfruit Enchiladas by Frontera


 

Directions

Serves 4. Step 1: Preheat oven to 375 degrees. Heat 1 Tbsp. oil in large nonstick skillet over medium heat. Add diced onions & poblano peppers and sauté for approx 5 minutes until softened. Add shredded jackfruit and contents of 1 jar of Frontera Tequila Borracha Salsa and cook until liquid has reduced, about 5 minutes. Step 2: Spray or lightly grease bottom of 9x13 baking dish; set aside. Place tortillas on work surface and spread 1 Tbsp Frontera enchilada sauce on each tortilla; place 1/3 cup jackfruit mixture down center of each tortilla and then sprinkle each with 1 Tbsp shredded Chihuahua cheese. Gently roll up tortillas and place seam side down in pan. Spread remaining enchilada sauce over top of prepared enchiladas, and sprinkle with remaining shredded Chihuahua cheese. Bake for 15 minutes. Step 3: Meanwhile, using same pan for jackfruit mixture (do not need to wash), heat 1 Tbsp oil. Add minced garlic and ground cumin; saute for 30 seconds, add drained beans and cook over medium heat for 5 minutes. Using a potato masher or back of fork, mash beans. Return to stove to keep warm. Prepare 2 pkg rice per package directions. Empty hot rice into serving bowl and squeeze the lime and the lemon over top of rice; add 2 tablespoons cilantro to rice and lightly toss with fork; season with salt & pepper. Chef's Tip: Mashing beans will thicken the mixture, for thinner consistency, add 1-2 tablespoons of water if desired. Step 4: Remove enchiladas from oven, garnish with queso fresco and remaining cilantro. Serve with the mashed black beans, cilantro lime rice and sour cream."
