Peapod Meal Kit: Plin Pasta with Chicken and Broccolini by Osteria Langhe

Servings: 4 Prep Time: 5 minutes Cook Time: 12 minutes Step 1: Preheat oven to 425 degrees fahrenheit. Place one gallon of water plus 1 Tablespoon table salt in a large pot and bring to a boil. Meanwhile, heat a 12-inch skillet over high heat; while pan is heating, place chicken breasts in re-sealable bag with flour and shake to coat each piece. Add 1 tablespoon olive oil to hot pan and swirl around to coat bottom of pan. Add the 4 chicken breasts to pan and sear for approx. 2 minutes on the first side or until golden brown. Step 2: While chicken breasts are searing, pour chicken stock in another 10-inch or 12-inch pan, turn heat to high, and bring stock to a boil. With tongs, turn each chicken breast over in first pan and sear for an additional 2 minutes. Arrange broccolini on top of chicken and then place pan in preheated oven. Set timer for 5 minutes. Step 3: While chicken and broccolini cook in oven, add 2 small pieces of cold butter to boiling stock. While stock is boiling with butter, drop Plin ravioli into the salted boiling water. While Plin is cooking, add 2 more pieces of butter to stock. Then when the Plin floats, drain pasta in colander and add to chicken stock. Turn off heat and add remaining two pieces of butter to Plin. Step 4: Remove chicken from oven and sprinkle with chile flakes. Place Plin on serving platter, reserving a little of the sauce. Place broccolini and chicken on top of Plin and drizzle with remaining sauce. Enjoy!
