Prep Time: 30 min. | Total Time: 30 min. Step 1: Heat 1-1/2 tsp. oil in large nonstick skillet on medium heat. Add eggs; cook 3 minutes or until set, stirring occasionally. Remove eggs from skillet; set aside. Wipe skillet clean with paper towels. While the eggs are cooking, place tortilla chips in a resealable bag and break into bite size pieces. Set aside. Step 2: Heat remaining oil in same skillet. Add onions; cook 2 minutes stirring frequently. Add peppers and crushed chips; cook 2 to 3 min. or until chips are lightly browned, stirring frequently. Step 3: Stir in enchilada sauce. Add eggs and 1/3 cup cheese; mix lightly. Cook 2 to 4 minutes or until egg mixture is heated through and cheese is melted. Step 4: Top with remaining cheese; cook on low heat 2 minutes or until melted. Remove from heat. Top with remaining ingredients. Chef’s Tip: For milder flavor, prepare using just 1 chipotle pepper. Or for spicier flavor, serve topped with your favorite hot pepper sauce.
