Servings: 6 Prep Time: 10 minutes Cook Time: 20 minutes Directions: Step 1: In a large pot, add 1 gallon of water and 1 tablespoon of salt and bring to boil. Meanwhile heat a large 12-inch skillet over medium-high heat and then add Italian sausage. Sauté sausage for approximately 8-10 minutes or until well browned, breaking up meat with spoon into small pieces. Drain off excess grease from sausage and then add white cooking wine; continue cooking until cooking wine reduces and is nearly dry, scraping up any browned bits on bottom of pan; set aside. Cook pasta according to directions and before draining reserve ½ cup of cooking water. While pasta is cooking, cut the tomatoes in half and set aside. Step 2: To make the pesto, start by processing the garlic, 2 tablespoons of parmesan cheese, pistachios, and basil in a blender for 15-20 seconds. Stream the olive oil into the blender and pulse until smooth. Season with salt and pepper. Step 3: When pasta is done cooking, place the skillet with the sausage back onto the cooktop and add the 1/2 cup of reserved cooking water. Heat over high heat until it simmers, then add the pesto, cherry tomatoes and pasta. Toss the pasta in the sauce for 1-2 minutes, then remove the skillet from the heat and garnish with remaining cheese.
