Servings: 4 Prep Time: 15 minutes Cook Time: 20 minutes Directions: Step 1: Preheat oven to 425 degrees. Bring 1 cup water to a boil in a small saucepan; add quinoa, bring back to a boil, reduce heat to low, cover and cook until grain is translucent and the germ has spiraled out from each grain, about 15-20 minutes. Set aside and keep covered. Meanwhile, combine 1/3 cup Hellmann’s® Mayonnaise with parmesan cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise Dressing mixture, then sprinkle with seasoned bread crumbs. Bake 20 minutes or until chicken is thoroughly cooked. Step 2: While chicken is baking, combine 1/3 cup Hellmann’s® Mayonnaise, shallots, fresh parsley, vinegar, and Maille® Dijon Mustard in a medium serving bowl. Add cooked quinoa and kale and toss to coat. Step 3: When chicken is finished cooking, remove from oven and evenly top cooked chicken with bruschetta topping. Serve with Quinoa and Kale Salad.
