Servings: 4 Prep Time: 10 min. Cook Time: 20 min. Directions: Step 1: Heat oven to broil. Line plate with two paper towels, drain corn and place on paper towels in even layer; set aside. Slice tomato 1/4-inch thick and set aside. In a medium bowl, whisk lime zest and egg with a fork to combine. Halve and pit avocado, then scoop out the flesh with a spoon and add to bowl. Add half (1/4 cup) of the cilantro, jalapeño, salt, cumin and pepper. Smash with a fork to combine into a chunky paste. Add chicken and mix until just combined, but do not overwork the meat. Step 2: Heat 2 tablespoons oil in a large nonstick frying pan over medium-high heat. Scoop the chicken mixture into the pan in 4 portions (about heaping 1/2 cup each), and use the back of a spoon to flatten into burgers that are about 4-inches wide. Pan-fry until browned and just cooked through, about 5 minutes per side. Step 3: Meanwhile, heat remaining 2 tablespoons oil in a large frying pan over medium-high heat. Add corn and cook until starting to brown, about 3 minutes. Add chili powder and cook 1 minute. Remove from the heat. Sprinkle with remaining 1/4 cup cilantro, squeeze juice from one lime half over corn, and toss to combine. Transfer to a serving bowl and sprinkle with cheese. Step 4: Place bun halves cut-side up on a baking sheet and broil until toasted and golden brown, 1 to 2 minutes. Transfer to plate or platter and spread 1 tablespoon chipotle mayonnaise on each bottom half place lettuce leaves. Divide the lettuce leaves and tomatoes among the bottom buns and top with the burgers. Close the burgers with the top bun and serve with the Elote salad.
