1. Cook Rice and Prep: Bring 3/4 cup water and a pinch of salt to a boil in a small, lidded pot. Once boiling, stir in rice. Cover, reduce heat to low, and cook until tender, about 15 minutes. Turn off heat; keep covered until ready to serve. Meanwhile, wash and dry all produce. Trim any stem ends from green beans. Place beans in a medium, microwave-safe bowl with a splash of water. Cover tightly with plastic wrap. Zest lime until you have 1 tsp; quarter lime. 2. Toast Sesame Seeds and Cook Chicken: Place sesame seeds in a large, dry pan over medium-high heat. Toast, stirring constantly, until sesame seeds are golden brown, 3-5 minutes. Turn off heat; transfer to a small bowl. Pat chicken dry with paper towels; season all over with salt and pepper. Heat a large drizzle of oil in same pan over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes per side. (Chicken is fully cooked when internal temperature reaches 165 degrees.) Turn off heat; remove from pan and let rest 5 minutes. Wash out pan. 3. Make Sauce: Add stock concentrates, honey 1/4 cup water, and half the sriracha to same pan. Bring to a simmer over medium-high heat, then reduce heat to low. Stir in 1 tbsp butter, more sriracha (if you like spicy food), and any resting juices from chicken. Cook until slightly thickened and glossy. 1-2 minutes. Turn off heat. 4. Finish and Serve: Microwave green beans on high until bright green and tender, about 2 minutes. Drain. Toss green with 1 tbsp butter, half the sesame seeds, salt, and pepper. Fluff rice with a work. Stir in lime zest and the juice from 2 lime wedges. Season with salt and pepper. Slice chicken crosswise. Divide rice and green beans between plates. Top with chicken and sauce. Garnish with remaining sesame seeds. Serve with remaining lime wedges on the side. Keep refrigerated.
