Peapod Meal Kit: Mediterranean Chickpea Pilaf



Prep Time: 10 Minutes Cook Time: 20 Minutes Serves: 4 1. Prepare Knorr® Rice Sides™ - Rice Pilaf according to package directions. While rice pilaf is cooking, chop mint and combine with tomatoes, onion, parsley, 1/2 tablespoon olive oil and lemon peel in medium bowl. Season, if desired, with salt; set aside. 2. Heat remaining olive oil in large nonstick skillet over medium-high heat. Season chickpeas, if desired, with salt and pepper and cook, stirring frequently, until golden, about 4 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Remove from heat. 3. Add rice pilaf mixture to chickpeas and stir to combine. Stir in tomato mixture and top with feta cheese. Sprinkle with additional chopped mint if desired.
