1. Soak plank in water for at least 30 minutes. Season meat, fish, or vegetables and place on plank. 2. If food is wider than the plank, cut it to fit; however, it is okay to have food extending 1/4 inch to 1/2 inch over the edges. 3. Place plank onto rack of prepared grill. Close lid. Begin at a low temperature with minimal ventilation. Light smoking should begin after 3-5 minutes. Light smoke indicates 350-375 degrees F; medium smoke indicates 400-425 degrees F; and heavy smoke indicates 450-500 degrees F. Only turn foods that cook fast. 4. If flame-ups occur, close ventilation or pour small amounts of water along the edge of the plank. Do not remove from grill. When Oven Grilling: For best results preheat oven to 325-350 degrees F. Place food on prepared plank on middle rack. Close oven and increase heat to 380-400 degrees F. Caution: After grilling, planks will remain hot. Let cool completely on grill before discarding. Boards are intended for one-time use. Store unused planks sealed in a cool, dry place.
