Blackening is a quick-cooking process that produces a peppery, black crust and sears in flavor and juices. This method works well with fish, beef, pork, or chicken. Caution: Blackening produces smoke and heat. It is best done outside on a gas grill or in a well-ventilated area. Use cuts of fish or meat less than 1/4 of an inch thick. Method: Place lightly oiled cast-iron skillet over high heat. Coat both sides of meat or fish with melted butter or oil, then dredge all sides in. blend. Carefully place food in hot, smoking skillet using long-handled tongs or fork. Cook for about 2 minutes per side or until done.
