Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Some food products may contain bacteria that could cause illness if the product is mishandled or cooked improperly. For your protection, follow these safe handling instructions. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: Oven: 1. Preheat oven to 360 degrees F. 2. Line a large baking sheet with foil and place a baking rack on top of the foil. 3. Remove belly from package and season as desired. With a knife, cross-hatch fat side of belly with cuts that are 1/4 to 1/2 deep, spaced about 1 inch apart. 4. Place seasoned belly on baking rack tat side up. Add 1/4 to 1/2 of water to bottom of baking sheet. If belly is larger than baking sheet, cut in half and use 2 baking sheets. 5. Place in oven and cook for at least 45 minutes per pound. For an extra tender belly, place a sheet of foil on top of belly and cook for an additional half hour. Internal temperature should read 185 degrees F for optimal tenderness. 6. Remove from oven and allow to rest 5 to 10 minutes. Slice and serve. Grill: 1. Preheat grill to medium-high. 2. Remove belly from package and season as desired. With a knife, cross-hatch fat side of belly with cuts that are 1/4 to 1/2 deep, spaced about 1 inch apart. 3, Place seasoned belly on hot side of grill to apply grill marks to both sides of belly, approximately 6 to 8 minutes per side. 4, Move belly to coolest side of grill; do not allow direct heat immediately under belly. 5. Cook for at least 45 minutes per pound and occasionally flip end to end to expose both sides to heat. Maintain internal grill temperature between 350 degrees F - 400 degrees F For an extra tender belly, cook for at least 1.5 hours. Internal temperature should read 185F for optimal tenderness. 6. Remove from grill and allow to rest 5 to 10 minutes. Slice and serve. Keep refrigerated.
