3 Easy Steps: Rinse well between petals. Trim: artichokes by cutting off top inch. Snip off petal thorns with scissors if desired. Only remove stem if artichoke needs to stand upright for stuffing. Steam: See 3 ways to steam at right. Artichokes can be cooked ahead of time and stored in refrigerator for several days prior to serving, stuffing or finishing off on the grill. They reheat very easily. Test for Doneness: Pierce base of artichoke with a fork - there should be no resistance. Seasoning Options: Prior to steaming, spread petals open for better coverage. Drizzle/sprinkle any seasoning combination over Artichoke to preferred taste: Olive oil, balsamic vinegar, broth, white wine, salad dressing, Parmesan cheese, minced garlic. Serving: Halved or quartered, one artichoke equals 2-4 servings. 3 Ways to Steam: Stove Top: Bring large pot of salted water to a boil. Place artichokes in pot 2/3 covered in boiling water or place above water on steamer rack. Squeeze juice of 1 lemon into boiling water. Cook until tender, about 45 mins (Cooking times may vary due to varying temperatures of stove top, microwave or oven). (Cutting artichokes in halves or quarters before cooking may shorten cooking time) Microwave: Cut artichoke in half and season cut sides. Place cut side down in flat bottom microwave-safe dish. Add 1-2 inches of water or broth, or 1/2 cup each of white win and olive oil. Cover tightly - cook on high for 20 minutes or until tender (Cooking times may vary due to varying temperatures of stove top, microwave or oven.) Drain and let cool before serving. Oven: Preheat oven to 425 degrees. Spread artichoke petals open to season. Between the petals: drizzle olive oil and preferred seasoning. Tightly double wrap and seal each individual artichoke with foil. Place in pre-heated oven and bake for one hour until tender. (Cooking times may vary due to varying temperatures of stove top, microwave or oven.) Remove from oven and let cool before unwrapping. (Can bake multiple artichokes at one time)
