Directions

Wild lingonberry blintz: Place 1lb of softened cream cheese, 1/4 cup of sugar, and 1 tbsp. of fresh lemon zest in a mixing bowl and thoroughly combine. Place approximately 2 oz. of mixture in the center of 8 crepes. Roll the crepes individually with the filling in the center, and chill until needed. To serve: Heat 1 tsp. of butter in saute pan. Add 2 filled crepes to the pan. saute until golden brown on each side, and place on plate. Repeat the steps for the rest of the filled crepes. Generously sprinkle with powdered sugar, and top with 1/4 cup of Lingonberries over the center of the crepes. Garnish with sprigs of mint. Refrigerate after opening.
