Prepare Your Own and Save. Back Ribs: Handling and Cutting Instructions: 1. Lay your IBP Supreme TrimĀ® back ribs on a large, flat cutting surface with the lean (pink) side facing down end the concave or "bone" side facing up. 2. Carefully open bag along the bone side of the back ribs using meat scissors or a sharp knife. 3. Remove back ribs from bag and dispose of bag and excess liquid. 4. Pat dry bone side of back ribs with a clean paper towel. Turn back ribs over and repeat this step on the lean side. 5. With a large, sharp, non-serrated knife cut into two equal-sized half racks, or leave whole. 6. The back ribs are now ready for your favorite dry rub, seasoning or special recipe. Other Options: 1. With full rack of back ribs lean side up, working left to right, cut between every third or fourth rib to create appetizer portions. 2. Create "extra meaty" individual back ribs. With a full rack of back ribs lean side up, working left to right, carefully remove and dispose of every second rib bone by cutting close to the bone on either side, leaving extra meaty back ribs. Keep refrigerated.
