Keep frozen. Ovens may vary. Microwave oven: Make a 1-inch slit in overwrap. Cook on high for 3 minutes. Remove overwrap. Stir beans. Cook on high for 1-2 more minutes. Let sit 1 minute. Serve. Conventional oven: Preheat oven to 375°F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 45-50 minutes. Let sit 1 minute. Serve. Toaster oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.

After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we set up Amy's kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only the finest ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy's products. Enchilada Verde is a specialty of one of our favorite restaurants (Tabachin) in Puerto Escondido, Mexico. This dish is very popular throughout Mexico; we think it will become an Amy's favorite. Amy's chefs have added a special touch to these enchiladas, blending organic spinach with Jack cheese and queso fresco (the traditional soft white cheese of Mexico). The organic tomatillos in the sauce are grown especially for Amy's, cooked and blended with authentic Mexican spices to create this delicious sauce bursting with flavor. Organic brown rice mixed with sweet corn and tender carrots, as well as our traditional organic black beans, with bell peppers and Anaheim Chiles, complete this wonderful meal. Enjoy your meal!
