Combine: Whisk shortening until fluffy and white. Switch to a paddle. Slowly add baking mix and eggs, and mix until everything is incorporated. Do not overheat. Prepare: Place parchment paper in cookie pan. Spoon 1-1/2 inch cookie balls on parchment paper space them 3 inches apart. Preheat oven to 350 degrees F. Bake: Bake until cookies are set (15-20 minutes). Remove from pan and let cookies cool before serving. Cookie variations: Add 1-1/2 cups chocolate chips to make a classic chocolate chip cookie. Add your favorite dried fruits and nuts for a trail mix cookie or use dried cranberries and walnuts for the popular cranberry walnut cookie sold in our bakery. You can also sprinkle each cookie before baking with some cinnamon and sugar to make a traditional snicker doodle. You will need 2 eggs; 1 cup shortening; 2 tablespoons water; parchment paper. Cookie Storage: Our cookies are always best when fresh. However, after cooling you may pack, and freeze the cookies. Thaw lightly in a microwave, and serve, if the cookies and been frozen.
