Storage: Keep in a cool and dry place. For optimum results, refrigerate after opening. Mix with flour or add to dough during first stage of mixing. Keep out of direct contact with ice water. Compressed Yeast: 1 lb = 5-1/2 oz + 11 oz additional water; 1 lb 4 oz = 6-1/2 oz + 13 oz additional water; 1 lb 8 oz = 8 oz + 1 lb additional water; 1 lb 12 oz = 9-1/2 oz + 1 lb 3 oz additional water; 454 g (1 lb) = 151 g + 303 g additional waters; 500 g = 167 g + 333 g additional water; 681 g (1-1/2 lb) = 227 g + 454 g additional water; 750 g = 250 g + 500 g additional water. When converting from compressed yeast, add additional water equal to two times the amount of Saf-Instant used.
