Aged at least two years. Straight bourbon whiskey. Beautiful vanilla and leather-scented, deep golden brown bourbon. Smooth caramel and oak, lingering like the last light of day on the waters of nearby Lake Chautauqua. We love our bourbon and we bet you will too. Made in small batches with 100: New York State grains and perfectly aged for over two years in open-air-seasoned premium white oak barrels with a No.3 char. It isn't about the water, although it is amazing here. It's not about heritage, although people have been making spirits here for over 300 years. Making great liquor is all about taking the character of a place and its point of view, and then distilling it to its essence. That takes patience. And it takes a deep understanding of what it means to be where you are. Because to create something truly special, it needs to be unaffected by outside influences.
