Cooking Instructions: Cover Freirich Tongue with water, bring to a boil. Then simmer 40 to 45 minutes per pound, until fork tender. Then peel off the skin starting at the large end. Hot: Freirich Tongue may then be used as a hot main dish with a variety of sauces, such as: horseradish, mustard, and sweet and sour raisin sauce. It can be glazed with jelly or marmalade (Reheat the skinned and glazed tongue in the oven at 300 degrees for 10 minutes). Cold: Cool Freirich Tongue after cooking. It can be served cold in salads, in sandwiches, and for barbeque. Also as a main dish on a cold meat platter. Keep refrigerated.
