Brewing the Perfect Cup. Begin with an immaculately clean coffeemaker. Use two level (measuring) tablespoons of freshly ground coffee for each six ounces of water. Fresh, clean, and cold water drawn immediately prior to brewing works best. Brew the coffee at 195-205 degrees F (91-96 degrees C). For automatic drip brewers use a medium grind (15 seconds in a blade grinder) and a four to six minute brew cycle. For press pots use a coarse grind (10-12 seconds in a blade grinder) and let steep for four to six minutes. For optimum flavor, drink coffee within 15 minutes of brewing or transfer to a stainless steel insulated air-tight container. Unbrewed coffee: Store in an air-tight container at room temperature.
