Our Recipe for Protein Pancakes: You'll Need: 4 tablespoons vegetable oil; 2-1/4 cups milk; 2 large eggs. Bakes 20-24 pancakes or 5 waffles. 1. Stir together pancake mix, oil, milk, and eggs until just combined. There may be some small lumps, that's ok. Let batter rest for 5 minutes to thicken. 2. Preheat lightly greased griddle or skillet to medium-low, about 300 degrees F. 3. Pour batter, 1/4 cup at a time, onto griddle. Cook for 2-3 minutes until the bottom is browned and the top has bubbles. Flip and cook until browned, 1-2 minutes. For vegan pancakes: For a small batch of vegan pancakes, combine 1 cup pancake mix with 3/4 cup of cool water and 1 tablespoon oil. Prepare as directed above. Makes 6 pancakes. Baker’s Tip: For waffles: Prepare according to step 1 and 2 above, increasing oil to 1/2 cup. Make in a waffle iron.
