Refrigerate at once for best quality. Important – Store your cheese in the refrigerator for up to one month. Do not freeze. If your cheese arrives with a puffy wrapper, the puffiness is only a gas the cheese breaths out as they ripen. Let the gas escape by opening one corner of the wrapper. Please note: You may notice some liquid weeping out of the cheese under warm conditions. This is perfectly normal and is caused by the fat content in the whole milk used in Baby Swiss. Regular milk has approximately 3.5% butterfat. 35% of the milk used at Chalet is from Brown Swiss cows, which product milk with a higher fat content (3.9 – 4.0% butterfat in the summer, 4.3% in the winter). What you are seeing is butter weeping out of the cheese when it gets warm.

The pictures on this handsome gift carton are reproductions of original paintings by Cad Marty, Sr., one of Wisconsin's cheesemaking pioneers. They started out as sketches during the 1890's, when the artist was a young Green County cheesemaker. After retiring, Carl renewed his lifelong interest in art by transforming those original sketches into oil paintings that captured his memories of Wisconsin’s early cheesemaking days. We’ve featured seven of Carl’s paintings on this carton, six of which have been tilted by the artist. The Cheese Cellar. Cheese wheels mature in a cool, moist curing cellar where the Cheesemaker skillfully washes, turns, and tends them until they reach the peak of flavor. The Cheese Factory. A local dairy farmer delivers milk to an old-time cheese factory in Green County, Wisconsin. The Cheese Kettle. The cheesemaker’s wife helps remove newly made cheese from the copper kettle, and another golden wheel of Swiss is born. The Cheesemaker. The cheesemaker, patiently stirring the milk, is apprehensive lest the apprentice drop the 180 lb. wheel of Swiss Cheese while moving it to the curing cellar. Untitled. Depicts a typical Green County dairy farm. (Please see back for more information). Oil Painter Carl Marty Sr., became a full-time cheesemaker at the age of 15 and company owner at 20! His pencil sketches during his career resulted in almost 600 paintings capturing the world of cheesemaking. Washing the rind. The rings are very important to the cheese, helping them retain moisture and defend against microorganisms. They are carefully washed and scrubbed to prevent mold trackts. Happiness Guaranteed!
