Deep Fried Mushrooms: Preheat deep fryer to 360 degrees F or heat 2 inches of oil in a large skillet. Pour 1 package of Don's Chuck Wagon mushroom batter mix into a large bowl. Package makes enough to prepare about 1 lb. mushrooms. Rinse mushrooms and toss into dry mix. Coat completely. Remove mushrooms, shake off excess and set aside. Add 3/4 cup cold water to remaining mix and stir to smooth consistency. Add water as necessary if thinner batter is desired. Dip: Insert wooden toothpick into dusted mushroom. Dip into batter mix, coating well. Drain off excess batter. Remove toothpick while dropping immediately into hot oil. Cook approximately 1-1/2 to 2 minutes, turning until golden brown. Drain on paper towels.
