Deep Fried Fish: Preheat deep fryer to 375 degrees F or heat 2 inches of oil in a large skillet. Mix 1 package of Don's Chuck Wagon fish & chips batter mix with 3/4 cup cold water until smooth. Thaw fish completely. Blot dry, then dip into batter mix. Drop immediately into preheated oil. Cook 3-4 minutes or until done, turning until golden brown. Fish is done when it flakes easily with a fork. Drain on paper towels. Try with zucchini, cauliflower, green peppers, green beans or any of your favorite vegetables. For delicious beer batter onion rings, substitute your favorite brew in place of water above. For Baked Fish: Moisten fish in water, then blot excess. Place in large zipper bag with dry fish & chips mix, 1/4 cup per pound of fish. Shake to coat. Bake in 350 degrees F oven on greased baking dish for 15-20 minutes, turning once. Package contains enough batter about 2 lbs of fish, depending on thickness. For baking, package can coat 5-7 lbs.
