Preparation: 1. In a slow cooker, add 2.5 lbs of filling of choice and 1/2 cup of water. Cook on low setting for 6-7 hours (for pork shoulder) or until tender (for other fillings). 2. Once filling is cooked, reserve 1/2 cup of cooking liquid, and drain the rest. 3. Add carnitas seasoning packet to the filing with 1/2 cup of cooking liquid. Mix well. (Optional) For crispy carnitas, spread seasoned filling over a sheet tray, and broil in the oven for 2-3 minutes or until crispy. 4. Enjoy in tacos (makes 24), with rice, or chef’s choice. Pair with: pork, chicken, or jackfruit.
