Cooking Instructions: All cooking appliances vary in performance, these are guide only. In a large pan bring 8 cups of water to boil. Add salt and chicken or hen. Season to taste with onion and garlic. Cook for 15 minutes. Add all the Ajiaco vegetables without the guascas. Cook until the potatoes are tender. Add the guascas and cook, an additional 5 minutes. Serve in deep bowls accompanied by milk, cream, capers and avocado. Keep frozen.
