I bagged it up, took it to a local bar, and people started asking where they could buy it. That's when I realized ...maybe this wasn't a mistake after all. I had owned a food truck and worked in vegan kitchens, but I'd never started a friggin' snack company! I threw out all my self doubt, started dialing in the flavors and decided to name it after my favorite city I've ever lived in. Sure, launching a plant-based snack out of Kentucky might seem a little odd. But that's exactly why it fits. Louisville is bold, a little weird, full of heart, and proudly DIY-just like this jerky.
