Let the Dust Settle: For a perfect even cook, red meat should sit out until it's room temperature before cooking, up to 45 min depending on thickness. Thick and Juicy Filets: Put your grill or skillet on med-high and let it get hot. When you throw the meat on, it should sizzle loudly. Sear for 3 minutes on each side, until the Dust starts to harden. Once seared, place in a 400 degrees pre-heated oven for 3-4 min. Take out and let the meat rest for 3-5 min before slicing.
