Dry red wine. Amarone della Valpolicella is made in the: appassimento method (drying of the grapes). Traditionally it is aged in wood for at least 6 months then bottled prior to release to the consumer. Once known as: Reticum, during King Theodoric's reign, it was also known as: Acinaticum. When Venice was a Republic. It was referred to as Vini dei Dogi (the Doge's wine). The term: Amarone was not seen up until the 18th Century.
