(If turkey is unstuffed, decrease roasting time approximately 30 minutes). When the turkey reaches the desired internal temperature, remove from oven. Cover and let stand for at least 15 minutes before carving. Note: Cooking time may vary as much as 30 minutes. Be careful not to “over-roast”. Check your oven for correct temperature. However, a piece of foil should be placed loosely over the turkey approximately the last hour of roasting. * USDA recommends roasting poultry to 165 degrees F internal temperature. Place meat thermometer in thickest part of breast to test. Gravy: After your turkey is done - add 6 to 8 ice cubes to juices in pan so fat can surface to be skimmed. Make a flour and cornstarch paste (half and half) with cold water. Combine thoroughly. Add to hot drippings n pan, stirring to thicken. Season to taste. Optional: When the turkey is half done, heat-do not boil, once sup white wine and pour over turkey. This is the secret to a marvelous gravy. Keep refrigerated or frozen.
