Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: Preparation: 1. Remove loin from bag and place fat side up on a cutting board. 2. Using a sharp knife, cut off 4 inch to 5 inch roasts from both ends of loin and set aside. 3. Cut center portion of loin into chops by cutting perpendicular to the length of the loin. Be sure to cut chops, that are consistent in thickness to ensure even cooking. Roasts: 1. Preheat oven to 350 degrees F. 2. Lightly coat roast with olive oil and season as desired. 3. Place roast in an oven safe dish and cover loosely with foil. 4. Place roast in oven and cook for approximately 20 minutes per pound or until internal temperature on a meat thermometer reaches 145 degrees F in the thickest part of the roast. 5. Remove from oven and allow to rest for at least 3 minutes. Chops: Preheat grill to medium-high (450 degrees F). 2. Lightly coat chops with olive oil and season as desired. 3. Place chops on grill and cook approximately 8 to 9 minutes for 3/4 inch chops or 12 to 16 minutes for 1-1/2 inch chops or until internal temperature on a meat thermometer reaches 145 degrees in the thickest part of the chop; turn once halfway through cooking. 5. Remove from grill and allow to rest for at least 3 minutes. Stovetop Instructions: To cook on stovetop, follow directions above except use a preheated heavy skillet over medium-high heat. Cut your Own and Save: Rib roast, loin chops, sirloin roast. Freezing Instructions: 1. Tightly wrap the roast or chops in plastic food wrap or place in zippered bags. Try to remove as much air as possible to prevent freezer burn. 2. Wrap in butcher paper and seal with masking tape. 3. Label packages with the cut and date using a permanent marker. 4. For best quality, place in freezer in a single layer for quick freezing. Use within one year for best quality; however, frozen meat stored constantly at 0 degrees F or below will always be safe to eat. Great for roasting. Keep refrigerated.
