Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: Roasts: 1. Preheat oven to 350 degrees F. 2. Lightly coat roast with olive oil and season as desired. 3. Place roast in an oven safe dish and cover loosely with foil. 4. Cook approximately 60 to 70 minutes or until internal temperature on a meat thermometer reaches 145 degrees F in the thickest part of the meat. 5. Remove from oven and let rest 3 minutes. Slice and serve. Chops: 1. Preheat grill to high. 2. Lightly coat chops with olive oil and season as desired. 3. Grill chops approximately 8 to 9 minutes per side or until internal temperature on a meat thermometer reaches 145 degrees F in the thickest part of the meat. 4. Remove from grill and let rest 3 minutes. Stovetop Instructions: To cook on stovetop, follow directions above except use a preheated heavy skillet over medium-high heat. Cut your Own and Save: Boneless rib roast, loin chops, boneless sirloin roast. Cutting Instructions: 1. Remove loin from bag and place on a cutting board, fat side up. 2. Using a sharp knife, cut off 4 inch to 5 inch roasts from both ends of loin and set aside. 3. Cut center portion of loin into chops by cutting perpendicular to the length of the loin. Be sure to cut chops that are consistent in thickness to ensure even cooking (1/2 inch thick for breakfast chops, 1 inch thick for grilling chops). Freezing Instructions: 1. Tightly wrap the roast or chops in plastic food wrap or place in zippered bags. 2. Tightly wrap the roast or chops in butcher paper and seal with masking tape. 3. Label packages using a permanent market. 4. Place in freezer in a single layer for quick freezing. Great for roasting. Keep refrigerated.
