Cooking Instructions: Preheat oven to 275 degrees F. Remove from package, season roast to taste and place lean side down in a shallow oven-safe dish. Roast uncovered for 55-85 minutes per pound until tender and reaches an internal temperature of at least 185 degrees F. Remove from oven and let the roast stand for several minutes before slicing. Ovens vary. Adjust cooking time accordingly. Keep refrigerated.
