Roast Prep: Thaw in the refrigerator for 24 hours before cooking. With scissors, remove plastic casing and clips from the roast. Place on a pan in foil. Pour half the baste of your choice over the roast. Cover and cook at 350 degrees F for 1 hour 20 minutes. Uncover and pour remaining baste over roast. Cook uncovered for 15 more minutes. For unthawed roast, cook for 2 hours 20 minutes plus 15 minutes uncovered. Cook thoroughly to a temperature of 165 degree F. Do not eat frozen or uncooked. Tofurky roast and gravy can be frozen until ready to use. Do not thaw or cook the roast in the microwave. Two great options for baste: whisk these ingredients together to baste before roasting. 3 t. Olive oil (or other vegetable oil), 1 t. Soy sauce, 1-1/2t. Fresh or ground sage (optional.) tofurky also gets along great with things like veggie broth, minced garlic, a dash of red wine or herbs like thyme or marjoram. Gravy Prep: Thaw. Stovetop: Pour into saucepan, whisk over medium heat until warm. Microwave: pour into microwave safe container, heat on high in 1-minute intervals until warm, stirring between intervals. Plant-Based Brownie Prep: Thaw under refrigeration for 1 hour prior to serving. Keep refrigerated after thawing. Carving the Roast: Over the years we've sliced a lot of our roasts. We've discovered the best way to carve your roast is with a serrated bread knife in thin slices. If you have leftovers, you're all set for sandwiches too! Pro Tip: Best enjoyed with friends. Keep frozen.
