For Gas Grills or Griddles: Place chips in a smoker tray or foil pouch and put it over a hot burner. Close the grill lid or cover them with a smoke dome. The chips will begin to smoke in about 10 to 15 minutes. For Charcoal Grills: Use chips in a smoker tray or pouch as described above, or place it next to the coals. You can also forgo the tray and place the chips directly on or next to the coals. Just watch for flare ups. For Electric Smokers: Electric smokers typically have smoker trays built in. Styles and sizes vary, so they can perform differently. But, be prepared to add more chips every 20 to 30 minutes. Tips and Techniques: Use dry chips to get smoking quicker, but watch for flare ups. Use a spray bottle to control them. Soak your chips to add moisture to the foods cooked or when putting chips directly onto hot coals. Keep the lid closed as much as possible to infuse that great smoke flavor.
