Homemade. Made Easy™. You will need: 1/2 cup water. 1/3 cup vegetable oil. 3 eggs. Before you begin: preheat oven to 400 degrees F. Lightly spray muffin cups with non-stick cooking spray or line with paper baking cups. 1 Place water, oil, eggs and full box muffin mix in medium bowl. Stir until moistened. 2 Spoon batter into prepared muffin pan, filling 2/3 full. 3 Bake as indicated in chart below or until golden brown. Yield - temperature - bake time. 24 mini muffins - 400 degrees F - 10-12 minutes. 12 standard muffins - 400 degrees F - 17-19 minutes. 6 jumbo muffins - 400 degrees F - 22-24 minutes. Cool 5 minutes. Gently loosen and remove from pan to wire rack. Store in airtight container. High altitude (over 5,000 feet): add an additional 1 tablespoon water. Prepare as directed. Chocolate chunk quick bread. Preheat oven to 350 degrees F. Prepare batter as directed above, reducing water to 1/3 cup. Place into prepared 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 48-52 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes and remove to wire rack. Cool completely. Store in airtight container. Easy recipe ideas.
