Easy step-by-step canning instructions: 1. Follow a tested home canning recipe, such as those found in the Ball Blue Book® guide to home canning, freezing and dehydration. 2. Assemble jars, lids, bands and canning equipment. Check all items to ensure they are in good working condition. 3. Wash jars, lids and bands in hot soapy water. Rinse well. Dry bands; set aside. Heat jars and lids in a saucepan of hot water (180 degrees F), keeping them hot until used. Do not boil lids. (For recipes requiring less than 10 minutes processing, sterilize jars by boiling 10 minutes.) 4. Process soft spreads, fruits, tomatoes (with added acid) and pickles in a boiling-water canner. Process vegetables, meat, poultry, seafood and combination recipes (with acid and low-acid ingredients) in a steam-pressure canner. 5. Fill hot jars, leaving recommended headspace: 1/4-inch for soft spreads and pickles; 1/2-inch for fruits and tomatoes; 1-inch for vegetables, meat, poultry and seafood. 6. Remove air bubbles with a nonmetallic spatula. 7. Wipe rim and threads of jar with a clean damp cloth. Center heated lid on jar with sealing compound next to jar top. Screw band down evenly and firmly until a point of resistance is met-fingertip tight. 8. Place jar in canner. Fill remaining jars. Process filled jars following the method and processing time indicated in the tested recipe. 9. When processing is complete, remove jars from canner. Set jars upright on a towel to cool. Bands should not be retightened. Let jars cool 12 to 24 hours. 10. After jars are cool, test for a seal by pressing the center of the lid. If the lid does not flex up and down, it is sealed. Remove bands. Wipe jars and lids with a clean damp cloth. Label and store jars in a cool, dry, dark place. Bands may be reused. Lids are for one-time use only.
