You will need: 1/2 cup water. 1/3 cup vegetable oil. 3 eggs. Before you begin: preheat oven to 400 degrees F. Lightly spray muffin cups with non-stick cooking spray or line with paper baking cups. 1. Place water, oil, eggs and full box muffin mix in medium bowl. Stir until moistened. 2. Spoon batter into prepared muffin pan, filling 2/3 full. 3. Bake as indicated in chart below or until golden brown. Yield - temperature - bake time. 24 mini muffins - 400 degrees F - 11-13 minutes. 12 standard muffins - 400 degrees F - 16-18 minutes. 6 jumbo muffins - 400 degrees F - 21-23 minutes. Cool 5 minutes. Gently loosen and remove from pan to wire rack. Store in airtight container. High altitude (over 5,000 feet): add an additional 1 tablespoon water. Prepare as directed. Banana bread. Preheat oven to 350 degrees F. Prepare batter as directed above. Place into prepared 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake 45-50 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes and remove to wire rack. Cool completely. Store in airtight container. Easy recipe ideas. Chocolate chip banana muffins. Prepare as directed, adding 1/2 cup chocolate chips. Bake as directed. Blueberry banana muffins. Prepare as directed, adding 1 cup fresh or frozen blueberries. Bake as directed, increasing the standard muffin bake time by two minutes if frozen berries are used. Banana spice muffins. Prepare as directed, adding 1 teaspoon cinnamon. Bake as directed.
