Already cooked heat and eat. To cook, gently simmer black eye peas in a saucepan, or zap in a microwave dish, until hot. For an easy meal, add smoked sausage or ham. Also great in dips, soups and salads. For serious heat, add my kickin' hot, hot sauce.

Growing up in South Carolina, we ate lots of beans and peas. For New Year's we always ate Hoppin' John made with black eye peas and rice for good luck. In fact, when I'm asked to describe soul food, my first response is black eye peas followed by collard greens, fried chicken and barbecue. You can serve my Black Eye Peas as a side dish or like I do in a cold salad with chopped summer vegetables and dressing.
