Makes 2 (8 oz) half pints. You will need: 1 2/3 cup crushed or finely chopped fruit. 2/3 cup sugar or Splenda® no calorie sweetener, granulated. 1 Tbsp bottled lemon juice, use only with peaches. 2 Ball® 8 oz freezer jars or 2 Ball® 8 oz jelly jars. Fresh jam in 3 easy steps (all fruit, except peaches): 1. Stir sugar and contents of package in a bowl. 2. Add fruit. Stir 3 minutes. 3. Ladle jam into clean jars and let stand 30 minutes. Enjoy. Or. Peach jam in 3 easy steps: 1. Stir peaches, sugar and lemon juice in a bowl. Let stand 10 minutes. 2. Add pectin gradually, to prevent clumping. Stir 3 minutes. 3. Ladle jam into clean jars and let stand 30 minutes. Enjoy. Quick tip: plastic freezer jars or glass jars with straight sides work best for freezing. When filling jars, leave 1/2 inch headspace to allow for food expansion during freezing. Enjoy now. Refrigerate up to 3 weeks. Freeze up to 1 year.
